The Egg McMuffin is McDonald's premier breakfast sandwich, developed in 1972 by Herb Peterson who developed it at his McDonald's location in Santa Barbara, California. This was probably in response to the JackInTheBox chain's release of the Breakfast Jack in 1969, itself also influenced by the dish eggs Benedict.

It is actually quite simple, consisting of a poached egg and one slice each of American cheese and Canadian bacon served on a toasted English muffin. The cook uses a system of small teflon coated metal collars to confine the eggs while they're being cooked.

Most of McDonald's breakfast entrees evolved in some way from the Egg McMuffin.
